Notes: Cultivated Angustifolia Agaves harvested in Qld and shipped back to the distillery.
The nose shows a buttery grape must hint with light blossom notes, smoke is very subdued. There is a touch of acetone lurking in the background. Some green spice on the palate and a touch of sweet smoke, vanilla here as well, with bitter cacao husk drawing out the finish.

Agave: 6-8 Years. 100% Cultivated.
Cooking: Underground oven with eucalyptus wood.
Crushing: Mechanical Mill and Hand Crush.
Fermentation: Wild fermentation in open topped fermenters
Distillation: Twice distilled in 300L Copper.
Yield: 12kg : 1L
