Notes: 100% wild Agave Americana harvested in NSW. Third distillation made with seasonal fruits, herbs and kangaroo meat suspended in the still.
The nose shows pear drop, kiwi and lavender. Theres some gamey leather here. Palate is botanical driven with clove and peppercorns and a green herbal bitterness which lengthens out the finish.

Agave: 8-10 Years. 100% Wild
Cooking: Underground oven with eucalyptus wood.
Crushing: Mechanical Mill and Hand Crush.
Fermentation: Wild fermentation in open topped fermenters
Distillation: Triple distilled in 300L Copper.
Additions to still: Papaya, seasonal fruits, Kangaroo meat
Yield: 12kg : 1L
