Notes: 100% Cultivated Angustifolia harvested in QLD and transported back to the distillery. Third distillation made with seasonal fruits, herbs and chicken breast hung in the still.
The nose shows fresh fennel, anise and green peppercorn. Theres some tropical fruit presence here on the papaya, mango spectrum. Palate is botanical driven with clove and pine needle laying over the fruitiness.

Agave: 8-10 Years. 100% Cultivated.
Cooking: Underground oven with eucalyptus wood.
Crushing: Mechanical Mill and Hand Crush.
Fermentation: Wild fermentation in open topped fermenters
Distillation: Triple distilled in 300L Copper.
